Making a drink
  1. For a pure cacao drink, allow 20–30 g per cup, or 30–40 g for a denser texture. With a chocolate bar, adjust the amount to your taste: it already contains sugar.
  2. Grate or break up the cacao or chocolate.
  3. Heat the water, or a plant-based drink, without bringing it to the boil: 60 to 65 °C at most.
  4. Pour over the pieces, let them melt, then beat with a whisk or a molinillo until you get an even foam.

Alto Miro

La plantation des Isminio, à Pajarillo.

Territory

A province that guards the Gran Pajatén

Pajarillo lies in the province of Mariscal Cáceres, in San Martín. Higher up, Río Abiseo National Park guards the remains of the Gran Pajatén: thirty-six archaeological sites have been recorded there, and people were already living there eight thousand years ago.

Below flows the Huallaga, which rises beneath Cerro de Pasco and runs eleven hundred kilometres between the Cordillera Central and the Cordillera Azul before joining the Marañón. Alto Miro is there, and it is a family plantation: that of the Isminio Gonzalès family.

The living

Orange trees, and what the shade costs and returns

On the Isminio Gonzalès family's land, several varieties of cacao tree grow among orange trees. It is not a forest: in fine flavour cacao agroforestry systems surveyed in Peru, researchers counted seventeen tree species across fourteen families, a diversity they consider moderately low. What shade does, on the other hand, has been measured in the same region of San Martín, on eight plots in five communities of the Alto Huayabamba: it tempers the dry-season microclimate, limits pests and diseases, and lowers the yield. Planting under orange trees means accepting a smaller harvest in return for suffering less from drought, in a valley where legal agriculture caused half of the deforestation of the first decade of this century. And the orange trees bring in butterflies, bees and birds.

Post-harvest

Up to two weeks, then the sun

At Alto Miro, fermentation can last up to two weeks. Racine Carrée links this length to a sweeter pulp and to the low rainfall in this part of the region. The beans are fermented and dried in a unit that Racine Carrée compares to a winemaker's cellar; drying is done in the sun, on raised beds.

Racine Carrée then does all the rest, raw or roasted, right up to tempering: Matéo, at Racine Carrée, tempers this cacao. It reaches us tempered, in chunks, and we leave it as it is.

Genetics

Fino de aroma, two harvests

The lot is classed as fino de aroma: it belongs to the fine flavour cacaos, as opposed to bulk cacaos. On the Isminio Gonzalès family's land, several varieties of cacao tree grow together, among the orange trees. The main harvest runs from April to August, and a small one comes round again from November to January. One family, one plantation, and two seasons in the year when the pods are opened.
