The Isminio Gonzalès family farm in Pajarillo (San Martín), in the Peruvian high Amazon. Low rainfall concentrates the sugars and calls for a long fermentation, up to two weeks; solar drying on raised beds. Orange trees, butterflies and birds share the grove.
Criollo & Fino de Aroma. Main harvest April to August, smaller harvest November to January.
