Recommended dose

20–30 g per ritual

  • Everyday 10–20 g
  • Creative 20–30 g
  • Ceremonial 30–40 g
Making a drink
  1. For a pure cacao drink, allow 20–30 g per cup, or 30–40 g for a denser texture. With a chocolate bar, adjust the amount to your taste: it already contains sugar.
  2. Grate or break up the cacao or chocolate.
  3. Heat the water, or a plant-based drink, without bringing it to the boil: 60 to 65 °C at most.
  4. Pour over the pieces, let them melt, then beat with a whisk or a molinillo until you get an even foam.

Sierra Nevada de Santa Marta

Urumo

La montagne monte seule depuis la mer. Le cacao pousse sur le versant chaud, sous les neiges.

Territory

5,700 metres, 42 kilometres from the beach

The Sierra Nevada de Santa Marta rises on its own from the Caribbean Sea, unconnected to any other range. Its highest point, at around five thousand seven hundred metres, stands forty-two kilometres from the coast. The snow-capped peaks tower over the warm slopes where cacao grows.

The massif has been a biosphere reserve since 1979. Urumo comes from its lower slope, at San Rafael, in Arhuaco territory.

Peoples

Urumo means spiral, and that is where a mochila begins

The Arhuacos call themselves Ikʉ: ‘the people’. They share this mountain with the Kogui, the Wiwa and the Kankuamo. In their language, Ika, of the Chibchan family, tutu is the mochila, and urumo is at once the snail, the spiral and the universe. Colombia's Ministry of Culture has made the mochila arhuaca a cultural symbol of the nation, and lists Ika among the ‘severely endangered’ languages. In 2022, UNESCO inscribed the knowledge system of the four peoples of the Sierra as intangible cultural heritage, and the inscription states that transmission happens through the use of the language. We buy this batch in San Rafael and we have left it its word; what the mamos say about it belongs to them. A mochila arhuaca is begun at the base, in a spiral, and woven upwards.

The living

From this slope, you can see the sea

From the high plots the view drops without obstacle to the sandbar and the sea. That is the shortcut that makes this mountain: from the hot cacao belt to the snows, a few dozen kilometres as the crow flies. The cacao here is a native hybrid of the zone, not a named variety, and that shows on a single slope: smooth green pods, green pods bossed like squashes, red, yellow, violet. The trees grow under bananas and tall shade trees, the litter on the ground is thick, and the flower comes out of the trunk itself.

Sagesse
