Preparing and dosing

How do you prepare the cacao?

Allow 10 to 40 g of cacao for 200 ml of water or plant milk. Heat without going above 65 °C. Add the cacao, grated or in pieces, whisk until the foam holds, then adjust to taste: a pinch of salt, a spice, a sweetener if you want one.

The whisk helps bring the cacao and the liquid together. Without stirring, the cocoa butter can separate and rise to the surface.

How much to start with?

Three pointers, to adjust to your own sensitivity:

10 to 20 g: to discover cacao or prepare a light cup, in the morning or early afternoon.
20 to 30 g: for a denser preparation, which you can also split into two small cups.
30 to 40 g: for a concentrated preparation, if you already know the cacao you have chosen.

Start with the small amount. Pure cacao is dense; adjust your next cup to your taste.

How should it be stored?

At room temperature, somewhere dry, away from light and strong smells. Avoid the fridge: there, cacao takes on moisture and the taste of everything else. Well sealed, pure cacao keeps for several years without losing anything.

What is inside

Does "raw" cacao really exist?

Fermentation heats up on its own: the mass can go above 50 °C and peak at around 53 °C. These temperatures come from the work of fermentation, before any roasting.

So we distinguish between unroasted cacao and cacao roasted at a low temperature. These words describe how the cacao has been treated more clearly than “raw”.

Do you add cocoa butter?

Depending on the batch and the origin, we sometimes add 3 to 5% cocoa butter at most. The added fat comes exclusively from cacao. Some bars are made without it; unroasted batches sometimes need a little for the stone grinder to do its work.

What does "ceremonial cacao" mean?

At MOOJO, ritual cacao is pure, from a named origin, made to be prepared and shared. “Ceremonial” commits us to six kinds of care: a fair price, terroir, genetics, rigour after the harvest, sail when possible, and gentle processing.

The cacaos we make, we process in Heks. Tuq'tuquilal comes to us already finished, from Lanquín. The word expresses our approach and the care given to cacao.

Does cacao contain caffeine?

Very little, far less than a coffee or a tea. What cacao contains in abundance is theobromine: a molecule from the same family, absorbed more slowly, longer-lasting, without the nervous spike. That is why a cup of cacao settles you rather than wakes you up.

Origin, analyses, transparency

Is your cacao organic?

Our cacaos are grown without GMOs or chemical inputs, but not the whole range carries the European organic label. Certification is paid for per origin, per operator and per year: it remains out of reach for the small, isolated cooperatives we work with.

Some of our origins arrive certified organic and fair trade. Others grow in the shade of other trees, without inputs, with growers our partners know, and no certificate to prove it. For every batch, we tell you where it comes from.

Direct Trade or Fair Trade?

We have both, depending on the origin. Our benchmark remains the price paid at the farm gate: we pay well above the world market price, in long relationships with farms and cooperatives known to our partners.

Following each batch, and our relationship with those who grew it, go hand in hand with every purchase we make.

Cadmium and heavy metals: what guarantee?

Cadmium is the sensitive parameter for Latin American cacaos: it comes from the soil, not from a farming practice. Our sourcing partners test every batch before offering it to us. A batch that exceeds European limits does not make it into their catalogue.

We do not publish these analyses: they are carried out upstream, by our sourcing partners. For our part, we occasionally have one checked at Eurofins.

Order, dispatch, returns

Is shipping free?

Yes, from 89 € for Belgium, Luxembourg, the Netherlands, France and Germany.

When does my order go out?

We ship twice a week, on Mondays and Thursdays. If you are in a hurry, write to us: you can collect your order in Heks the same day, by appointment.

And when it is hot?

Above 25 °C, we pause chocolate shipments for a while: a parcel that melts in a van never arrives in good shape. We let you know, and offer to have you collect it in Heks, or to send it as soon as the heat drops.

I ordered the wrong cacao, what should I do?

Write to us straight away. Before shipping, we correct your order. Once it has left, we look for a solution with you.

Damaged parcel or a mistake on our side?

Contact us within 14 days with a photo, and we settle it, reshipment or refund, without discussion.

The return conditions and the right of withdrawal are detailed in our return conditions.
