The Cuencas beans come from Alto Huayabamba, the Chuncho from the Urubamba valley. In Heks, we bring them together with majambo, Theobroma bicolor, in a 72% vegan bar with no animal milk and a plant-based roundness.

Making a drink
  1. For a pure cacao drink, allow 20–30 g per cup, or 30–40 g for a denser texture. With a chocolate bar, adjust the amount to your taste: it already contains sugar.
  2. Grate or break up the cacao or chocolate.
  3. Heat the water, or a plant-based drink, without bringing it to the boil: 60 to 65 °C at most.
  4. Pour over the pieces, let them melt, then beat with a whisk or a molinillo until you get an even foam.

In San Martín, the Alto Huayabamba valley runs down towards the Amazon, between 200 and 1,000 m. Its loamy, silty soils border the Río Abiseo National Park and the Gran Pajatén Biosphere Reserve. The families of Choba Choba grow cacao in this landscape.

Urubamba valley, between the Andes & the Amazon

The Urubamba valley, in the province of La Convención, Cusco: between 400 and 1,200 m, a rare altitude for cacao. Silty, sandy soils, hot days, cool Andean nights that concentrate the aromas. Chuncho is a native cacao, grown by the Matsigenka, or Machiguenga, communities.
