Doses & formats

Pure cacao is dense.

The amount changes the experience: a light cup on waking has nothing in common with a long session at the end of the day. These pointers are practical. They are no substitute for listening to your body, or for medical advice if you need it.

Usual markers

Three pointers for a cup

Everyday · 10–20 g

For a first taste, or for the morning: a light presence.

Creative · 20–30 g

A full cup, or cacao shared between two.

Ceremonial · 30–40 g

A denser session, to keep for when you already know the matter.

Formats

Bar, paste,
beans

Bar or cacao pieces: break or grate, easy to portion.
Paste or block: cut or grate, then weigh.
Beans: to crunch, to compare from one origin to another, or to grind yourself.

The form changes the gesture, not the origin. Always look at where the batch comes from.

Listening

What the number does not say

Two origins, at the same dose, do not feel the same. One can be floral and light, the other tannic and long on the palate. Choose the origin first, then adjust the amount. The dose is a tool; the place remains the source.
